Recipes for a diabetic are very difficult to find. So was surprised to find this one among the old recipes. This cookie will satisfy even a diabetic person. Any body can relish this cookie due to the applesauce which makes the cookie moist.
2 cup flour
1/2 tsp. salt
1/2 tsp. each cinnamon, nutmeg and cloves
1/2 cup butter or margarine
1 tbsp. plus 1 tsp. artificial sweetener
1 tsp. baking soda
1 cup applesauce, unsweetened
1 egg, well beaten
1 cup chopped nuts
1 cup raisins
Make a cream of the butter and the artificial sweetener. Now sieve together flour, salt and the spices. Take unsweetened applesauce and mix baking soda with it. Add well beaten egg. Add his to the creamed butter. Fold in the sifted flour slowly and mix well. Add nuts and raisins. Take a lighly greased sheet and drop one teaspoonful at a time. Bake them for 15 minutes at 375 degrees till they become slight brown. The cookies are ready.
Useful tip: An excellent way to chop nuts and raisins is to put them in a food processor. A little bit of flour can be added before chopping so that they do not cluster together.
