1/2 cup shortening
1 1/2 cups sugar
2 beaten eggs
2 oz. red food coloring
3 tbsp. Nestle’s Quick cocoa
1 tsp. salt
1 tsp. vanilla
2 1/2 cups sifted cake flour, sifted 3 times
1 cup buttermilk
1 tsp. baking soda dissolved in 1 tbsp. vinegar
Mix shortening and sugar till creamy. Beat eggs till frothy and add to the cream. A paste of coloring and cocoa should be added to the mixture next. Fold in buttermilk and sieved flour alternatively. Add vanilla essence and salt. Mix in the vinegar and baking soda combination. Pour the batter in a greased and floured pan and bake the cake at 350 degrees for at least half an hour or till done.
Useful tips Cake flour is a fine flour use for baking purposes. Its lower protein content makes it light and fluffy. All purpose flour is not the same as cake flour. In any case you are using all purpose flour to bake a cake then reduce its quantity by 2tabespoons for every cup used. This prevents the cake from getting dry.
White Fluffy Frosting:
5 tbsp. flour
1 cup milk
1/2 cup butter
1/2 cup shortening
1 cup sugar
2 tsp. vanilla
To prepare a white fluffy frosting mix flour and milk and cook it till it becomes thick, Leave it aside to cool till tepid. Make a cream of butter, shortening, sugar and vanilla essence. Mix it with the warm milk and flour mixture. Beat till the mixture becomes soft and flossy. Add a little green color if necessary. Then frost cake.
